Torrax XD Dried dark malt extract from Muntons. This ultra-dark malt powder has a strong spicy, smoky and roasted flavour. The production process involves hot water extraction, followed by vacuum evaporation and spray drying. Moisture content less than 6%; pH (10% solution) 3.0-4.4; EBC colour (10% solution) 1360-1830. Due to its unique properties, Torrax XD is used in the production of dark breads, savoury sauces, snacks and meat products where an authentic ‘roasted’ aroma and deep dark colour are required. A key ingredient in malt beverages worldwide to impart a characteristic malt flavour. Enhances creaminess in dairy products and ice cream. Improves the colour, taste, creaminess or chewiness of nougat, caramel, chocolate and sweets. Masks unpleasant aftertastes and sour notes in foods and beverages.
