Dark liquid malt extract from Muntons. A viscous liquid obtained by hot enzymatic extraction from malted barley, followed by filtration and concentration by vacuum evaporation. Sweet, with a pronounced malt flavour. Dry matter content: 79.5-82%; pH (10% solution wt/vol) 5-6; EBC colour (10% solution wt/vol) 40-55. Ideal for the baking industry and confectionery production. Gives finished products an attractive dark shade, improves texture and enriches the aroma of products.
