The main property of E 412 is to swell and create very viscous solutions in hot and cold water. This is the cheapest and strongest thickener and stabilizer in the modern food industry. Used in the food industry to regulate viscosity; stabilize emulsions; give products a creamy consistency; increase elasticity; in dairy products as a moisture retainer; in frozen products to prevent the growth of ice crystals; to increase the volume of products in the production of cheeses; in instant products for a uniform consistency; in meat products to increase the viscosity of minced meat, reduce moisture loss; in general, to increase the shelf life of products.
