Isomalt GALLIA by Louis Francois (1 kg). Made from beet sugar, it is a unique substitute for natural sugar. It retains almost all of its natural physical properties, which gives additional advantages for sugar craftsmen, cake decorators and confectioners. It has increased moisture resistance, making finished products less sticky (which is important during work) and less prone to clouding, as well as having better resistance to crystallisation. Isomalt is used as a sweetener and structuring agent in confectionery products, from delicate decorations to shelled candies. It has a clean, mild sweet taste without any off-flavours, approximately 45-60% of the sweetness of sucrose, and high heat resistance. Used to make transparent candies, edible decorations (vases, crystals, ‘broken glass’), soft and hard caramels, dragees, chewing gum, chocolate and ice cream.
