Hazelnut Paste by SantoSantaniello (5 kg) A product made from premium-grade hazelnuts with a delicate, refined hazelnut flavor. This is a natural paste produced by fine grinding of roasted nuts, without the addition of sugar, flavorings, or colorants. It has an intense, чистий nutty taste, a выразительный aroma, and a creamy, homogeneous texture, ensuring stable performance in professional pastry and confectionery applications. It is used for the preparation of fillings and creams, including: praline, fat-based and butter creams, Paris-Brest cream, as well as praline masses for classic confectionery products such as “Red Poppy”–type candies and similar traditional items. It performs excellently in chocolate applications (ganaches, molded and cut pralines, filled chocolate bars). Suitable for entremets and mousse desserts as a flavor component in mousses, crémeux, and crunchy layers in combination with chocolate, as well as for ice cream, semifreddo, baking (cakes, roulades, sponge and shortcrust products), dessert sauces, layers, and plated desserts. The high concentration of hazelnut provides an intense flavor even at low dosage and excellent compatibility with chocolate and fat-based systems.
