Due to the increased cocoa butter content, this chocolate is very versatile. It just behaves a little differently than standard couverture. Please note! Due to its high fluidity, the product is not suitable for casting candy molds and shells, decoration. It is undesirable to use it for making truffles and cut candies. They will not hold their shape well. However, the chocolate is suitable for glazing, making gourmet glazes, mirror glazes, sauces, toppings and soft, creamy ganaches that require increased fluidity.
