These callets are 100% free of AZO colorants, making them a safe and contemporary choice for professional chocolatiers. Usage: Melting, tempering, and cooling processes are identical to those of classic Callebaut white chocolate. With a standard fluidity of “3 drops,” Orange Callets™ can be used in the same versatile ways as traditional chocolate. They are particularly well suited for adding color accents to hollow figures and pralines, creating elegant decorations, and flavoring creams, ganaches, and mousses with a refreshing citrus note.
