Dark extra-bitter chocolate couverture Guayaquil 64% from Cacao Barry. It has an intense cocoa flavour with notes of roasted cocoa beans, coffee and chestnut, delicately highlighted. Known as the undisputed benchmark for dark couverture for a variety of applications, this chocolate has become an essential ingredient in production laboratories around the world. With an optimal melting point and fluidity of 4 drops, the extra dark Guayaquil 64% can easily adapt to creamy mousse or velvety ganache or exquisite glaze. Made from a skilful blend of cocoa beans from Ecuador, Ghana and Côte d'Ivoire, this bitter chocolate with roasted notes reveals pure cocoa aromas of unrivalled intensity, enhanced by hints of coffee and chestnut. It is made in France using the Q-Fermentation™ process, and its balanced flavour is achieved through the careful selection of natural enzymes added to the mucilage that covers the cocoa beans during the fermentation phase. Recommended for use in cakes, drinks, frozen desserts, bars and tartlets, brownies, cheesecakes, chocolate cakes, cookies, cupcakes, doughnuts and macarons. Its high fluidity allows it to be used in candies and coatings. Please note! Chocolate is not heat stable!
