Chocolate dark couverture 66% MEXICO, Cacao Barry (pistoles), 1 kg, CHD-N66MEX-2B-U73
This French single-origin chocolate is crafted from the finest Forastero cocoa beans grown in Mexico. Sourced from the Tabasco region on the Caribbean coast and Chiapas on the Pacific coast, Couverture Origine Mexique 66% dark chocolate takes you on a true flavor journey, evoking the rich heritage of the Aztec civilization. It opens with a delicate tang, gradually revealing deep woody and spicy notes with a subtle hint of licorice. Despite its high cocoa content, this chocolate is never bitter, maintaining an elegant balance of flavor and texture. Couverture Mexique is perfect for fine coatings, molding, ganaches, mousses, pralines, and as an ingredient in fillings, cookies, sauces, decorations, ice creams, and sorbets. Ideal for creating cakes, beverages, frozen desserts, bars and tarts, brownies, cheesecakes, cupcakes, cookies, donuts, and macarons. Its high fluidity ensures excellent performance in confectionery and coatings. Please note: this chocolate is not heat-stable.
