Glucose syrup from INTERCORN (43-litre drum). Glucose syrup IG42 (DE 42) is an enzymatically hydrolysed syrup made from corn starch with a reducing sugar content of approximately 42% in terms of dextrose. It has medium sweetness, good crystallisation and moisture retention properties. It is used in the food industry as a sweetener, texturing agent, thickener, stabiliser, and as a component for controlling sugar crystallisation. It prevents products from becoming sugary, adds plasticity and helps baked goods stay soft and fresh longer. Ideal for making caramel, mastic, marshmallows, ice cream and glaze.
