Whole cherries in Bigarreaux syrup from Aptunion. Made from high-quality fruits obtained by osmotic dehydration in glucose-fructose syrup. The product is ready to use and does not require processing. Due to the slow saturation with sugar, the cherry retains its whole structure, color and elasticity, does not shrivel and does not lose shape even after heat treatment, for example, when baking panettone and cupcakes. Ideal for mousse desserts and shock-frozen cakes - after defrosting, the cherry does not "flow" and does not change its texture. Used as an inclusion in almost any dish (yogurts, cocktails, mousses, cakes, pies, candies such as "Cherry in alcohol" or candies with ganache), or as a ready-made decoration for tarts, pastries and cocktails. In this case, it is recommended to dry it slightly on a paper towel or cover it with a neutral gel to avoid the syrup from leaking onto the cream or glaze. Due to the high percentage of dry matter in cherries, they can be used in long-term storage products (muesli, chocolate bars with inclusions, candies, dragees).
