Cold-process thickener from Dawn Foods. Designed to stabilize fruit juices and various types of fruit pulp (purées). The application process is exceptionally simple and time-efficient: just blend 100–120 g of the dry mix with 200 g of sugar, add 1,000 ml of fruit juice, and whisk. Ready to use. This functional blend creates a flawless gel structure that ensures clean, precise slicing of the finished product. It remains stable during freezing and baking, effectively absorbs excess moisture, and prevents moisture migration into the dough base or filling. The product minimizes juice release from fresh and frozen fruit, delivering a controlled texture when combined with liquids and sugar. The filling remains thermally stable and resistant to freeze–thaw cycles, holding its shape without spreading while fully retaining its functional properties.
