Quail with Smoked cherry and praline
Ingredients
- 1 pc — quail
- 150 g — cherry
- 200 g — Jerusalem artichoke
- 100 g — potato
- 200 g — milk 2.5%
- 30 g —pistachio paste SantoSantaniello
- 30 g —hazelnut SantoSantaniello
- 30 g — almondSantoSantaniello
- 30 g — pistachioDisano
- 100 g — sugar
- 50 g —butter Traditional 82% Debic
- 1 g — dry red pepper
- 100 g — cherry puree DiraFrost
- 10 g — sublimated (freeze-dried) cherryBest Way Foods
- 20 g — soy sauce
- 20 g — honey
- 100 g — onion skins
- Wood sorrel microgreens
- Vegetable oil
- Salt

Carefully remove the ribcage from the quail and marinate it with honey, soy sauce, salt, and oil.

Sear the quail in a pan until cooked through, adding butter at the very end.

Peel the Jerusalem artichoke and boil it with potatoes in a mixture of milk and water to reduce the intensity of the Jerusalem artichoke flavor.

Blend in a Thermomix with the addition of butter.

Prepare a caramel using sugar and water.

For the praline, take a nut mix, add red pepper, and combine it with the caramel.

Pit the cherries, mix them with cherry puree, and smoke them over onion skins.

Decorate with sublimated (freeze-dried) berries and microgreens.
