Mango Silk: Edible Decor for Desserts
Ingredients
- 200 g —fruit purée Capfruit
- 6 g — neutral vegetable oil
- 4 g — sugar
- 1 g — salt
- 2 g — ginger
- 1 g —pectin NH Louis Francois
Preparation Method
Place all ingredients into a blender bowl and blend until a perfectly smooth, lump-free consistency is achieved.
Pour the mixture onto a silicone mat and spread evenly with a spatula, creating an ultra-thin layer. Place the mat on a baking tray.
Dry in a convection oven at 60°C for approximately 75 minutes. Once drying is complete, remove the tray and allow the sheet to cool completely at room temperature.
The finished mango Fruit Silk can be used as a decorative accent, textural element, or edible art garnish for plated desserts and pastry creations.
