Chocolate-Nut Bars «Crackle Noir»
- 150 g — icing sugarCouplet Sugar
- 150 g —nut paste (almond or hazelnut) Santo Santaniello
- 50 g —cocoa butter Chocovic
- 100 g —Fountain chocolate (for the base) Callebaut
- 70 g —pailleté feuilletine (wafer flakes) Callebaut
- 50 g — crunchy caramel BWF
Method of Preparation
Step 1: Preparing the sugar base
Sift the icing sugar through a fine mesh sieve to remove any lumps. Melt the cocoa butter (using a water bath or microwave), add it to the sugar, and mix thoroughly with a spatula until a smooth paste forms.
Step 2: Creating a silky texture
Add the nut paste to the mixture. To achieve an ideal "store-bought" smoothness and silkiness, process the mass with an immersion blender.
Step 3: Incorporating chocolate
Fold in the pre-tempered chocolate. If the mass becomes too thick, you may briefly pulse it with the blender again to ensure full emulsification.
Step 4: Adding the crunch
Using a spatula, gently fold in the feuilletine and crunchy caramel. It is important to do this by hand to preserve the integrity of the crunchy particles.
Step 5: Molding and setting
Distribute the mass into rectangular bar molds and leave in a cool place until completely set.
Step 6: Finishing touches
Unmold the bars. Coat them with a thin layer of tempered chocolate. While the glaze is still wet, garnish with a pinch of caramel or crushed nuts.
