- 60 g — wheat flour

- 140 g — egg whites
- 188 g —raspberry purée DiraFrost
- 27 g — sugar
- 3 g —pectin NH Louis Francois
- 2 g — gelatin 200 bloomCOOKIT
- 6 g — rose water
- 133 g —RUBY RB2 chocolate Callebaut
- 160 g —almond paste 100% SantoSantaniello
- 115 g —waffle crumbs Callebaut
- 20 g — freeze-dried raspberry powder Best Way Foods
- 2 g — gelatin sheets 200 bloom
- 7 g — glucose
- 7 g —invert sugar Louis Francois
- 120 g —dairy cream Cream 32% Debic
- 75 g —white chocolate Velvet Callebaut
- 250 g —dairy cream 35% Reny Picot
- 7 g — rose water
RASPBERRY FINANCIER
Method:
Melt the butter and cool it down to 50 °C.
In a mixer bowl, combine all dry ingredients, previously sifting the wheat flour and powdered sugar.
Gradually add the egg whites, mixing continuously with a paddle attachment until smooth.
Add the melted butter at 50 °C and mix thoroughly.
Fill the molds to 2/3 of the volume and place 2 frozen raspberries into each portion.
Bake at 165 °C for 12–14 minutes.

RASPBERRY INFUSION
Method:
Soak the gelatin in cold water until bloomed.
Mix the pectin with sugar. Heat the raspberry purée to 40 °C, then add the sugar–pectin mixture.
Bring to a boil and cook for 15 seconds.
Remove from heat, add bloomed gelatin and rose water, mix thoroughly.
Pour into molds at 12 g per portion and freeze.

RUBY / RASPBERRY CRUMBLE
Method:
Melt the chocolate together with the almond paste.
Add waffle crumbs and freeze-dried raspberry powder, mix well until evenly combined.
Form the crumble using 25 g per portion.

WHIPPED CREAM
Method:
Soak the gelatin in cold water.
Bring the 32% cream to a boil with glucose and invert sugar.
Add the gelatin and mix until fully dissolved.
Pour the mixture over the white chocolate and blend until smooth.
Add cold 35% cream and rose water, mix gently.
Cover with plastic wrap in contact and leave to crystallize for at least 12 hours. Whip before use.

FINAL DESSERT ASSEMBLY
Fill the mold completely with whipped cream, covering the frozen raspberry infusion.
Freeze until fully stabilized.
Using a heart-shaped mold, form the ruby crumble and place the raspberry financier on top.
Fix the decorative RUBY RB2 chocolate element using a small amount of whipped cream.
Finish the dessert with raspberry infusion mousse and secure with neutral glaze.
