As we eagerly approach Easter 2024, we are thrilled to share the highlights of our fantastic master class dedicated to a diverse range of Easter creations. On March 20, we gathered at the Chef University Culinary Academy to explore innovative recipes and, of course, experience their exceptional flavors firsthand.
Leading the session was Chief Technologist Nadiya Ivanova, who shared a wealth of expertise and professional insights. While Easter recipes are often passed down through generations, we believe that in today's professional landscape, relying on expert knowledge is key. From specialized patterned molds and dough-kneading techniques to selecting premium ingredients and perfecting baking times—every nuance of aesthetic presentation was addressed.
This event was a comprehensive training session, concluding with a certification ceremony for all participants and a curated tasting of the featured products, including:

Yeast-free Quark (Cheese) Easter Bread (Paska)

Modern Chocolate Cruffin (a sophisticated fusion of a muffin, croissant, and traditional Easter bread)

Chocolate-Orange Yeast-free Paska

Vanilla-Lemon Paska
The program focused primarily on yeast-free recipes, which offer significant advantages for modern production: faster kneading, no need for long stabilization, better digestibility, and a superior, tender texture. These recipes guarantee consistent, high-quality results every time.
A critical technical focus was the use of bake-stable (thermostable) inclusions to maintain flavor and texture during baking. We utilized premium chocolate and nut fillings and inclusions from Callebaut and Cacao Barry. For products with centers, we achieved a light, pleasant consistency using professional fillings from Cookit and Callebaut. The chocolate-based creations featured high-intensity cocoa powders from Callebaut and Bensdorp, ensuring a rich, long-lasting taste.
Our main takeaway: Easter breads and cruffins can be incredibly stylish and original. The final result depends heavily on the choice of decor. A dense yet flowing glaze is essential for that iconic holiday look. Our portfolio offers endless decorative possibilities, including Aptunion fruit inclusions, Couplet Sugars, Santo Santaniello and Callebaut nut selections, and crispy decors from D’Orsogna. We also featured osmotic-dried fruit and berry inclusions by Desing.
