Today, we are sharing details of an event where we tasted incredibly aromatic croissants. On January 31, at a master class in the Chef University Academy, Best Way Foods technologist Nadiya Ivanova shared with us perfect recipes for puff pastry.

The main secret of puff pastry for croissants is special high-quality butter and the mixing technology. For the dough, we used the following ingredients from our assortment: Traditional Debic 82% butter and Debic Croissant butter. The base for the filling was Debic cream cheese.
We tasted both sweet and savory versions in Nadiya Ivanova’s signature performance. During preparation, maximum precision in proportions and temperature control was maintained using Best Way Foods extrusion. This is vital for the dough's rise, creating a crispy crust on the outside while leaving a delicate, airy consistency inside.

We were offered a grain croissant with the addition of Campos tuna in oil and lettuce—a harmonious combination of a creamy-cereal base and filling.
